Back to School Dinners

Back to school time means hot dinners in my family. Something about Summer makes it ok to have salads and sandwiches, but now that the cold nights are drawing in I like to think about comfort food and family time around the table. One of my favorite Kiddy Cook dinner recipes is one pot fillet 'o' fish with chorizo: Prepare and chop a selection of vegetables (carrots, red peppers, onions and potatoes are a firm favourite of ours). Place them in an oven proof dish and drizzle with plenty of olive oil. Place in a hot oven and when the vegetables are almost cooked cover with vine tomatoes (that's tomatoes still on the vine), place your fillet 'o' fish on top and sprinkle chopped chorizo all around. Place in the oven again for approximately 20 minutes until everything is cooked and covered in the beautiful rich chorizo oil. Quick! Easy!…
